Scrumptious Salmon Wasabi Burgers

Salmon wasabi burgers are a flavorful and healthy alternative to traditional beef burgers. Made with fresh salmon, panko breadcrumbs, and a spicy wasabi mayo, these burgers are packed with protein and omega-3 fatty acids.

Ingredients per serving:

  • 4 oz. fresh salmon fillet, skin removed
  • 1/4 cup panko breadcrumbs
  • 1 egg, lightly beaten
  • 1 tablespoon chopped green onion
  • One teaspoon grated ginger
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon canola oil
  • 1/4 cup mayonnaise
  • One tablespoon wasabi paste
  • 1 teaspoon honey
  • 1 teaspoon rice vinegar
  • 2 buns
  • Arugula or lettuce leaves
  • Sliced avocado

Instructions:

Chop the salmon into small pieces and place in a bowl. Add the breadcrumbs, egg, green onion, ginger, soy sauce, sesame oil, salt, and pepper. Mix together until well combined.

Divide the mixture into two equal portions and form into patties.

Heat the canola oil in a skillet over medium-high heat. Add the patties and cook for 3-4 minutes on each side, or until browned and cooked through.

In a small bowl, whisk together the mayonnaise, wasabi paste, honey, and rice vinegar to make the spicy mayo.

Toast the buns and assemble the burgers with the arugula or lettuce leaves, sliced avocado, and a generous dollop of the wasabi mayo.
