Ingredients for Keto Chicken Broccoli Casserole:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 3 cups broccoli florets
  • 2 cloves garlic, minced
  • 1/4 cup chopped onion
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp almond flour
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Preheat oven to 375°F.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add broccoli, garlic, and onion to the same skillet and sauté until softened, about 5 minutes.
  4. In a small bowl, whisk together chicken broth, heavy cream, almond flour, thyme, salt, and pepper until well combined.
  5. Add the chicken back to the skillet with the broccoli and pour the cream mixture over the top. Stir until everything is well combined.
  6. Transfer the mixture to a 9×13-inch baking dish and bake in the preheated oven for 25-30 minutes until the top is golden brown and the mixture is bubbling.
  7. Remove from the oven and let cool for a few minutes before serving.
